I like to add some fresh pineapple to this salsa.  The combination of the mango and pineapple is amazing on grilled fish or poultry.  If you want, you can add a little rum to the mix.

Ingredients
2 mangoes peeled and diced
1/2 - 3/4 cup peeled, diced cucumber
1 tablespoon finely chopped jalapeno
1/2 cup diced red onion
1 tablespoon lime juice (or to taste)
1 – 2 teaspoons honey (optional)
1/2  - 1 teaspoon Rain's Choice pure vanilla extract
1/3 cup roughly chopped cilantro leaves
Salt and pepper

Instructions
Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and
mix well. Season with salt and pepper, to taste.
