This is an "old fashioned" as in from the late 1930s - 1940s, kind of pie in that the eggs are not cooked. Use organic eggs or eggs bought from a very reliable source and don't use this recipe for very small children or people with a compromised immune system. Other than the warning, it's a good basic recipe.
Ingredients 1 pie crust, baked and cooled 6 ounces good quality chocolate chips tablespoon light cream 4 eggs separated 2 teaspoons Rain's Choice pure vanilla extract
1/2 pint heavy cream 2 tablespoons powdered sugar 1 teaspoon Rain's Choice pure vanilla extract
Instructions Place chocolate chips and cream in a double boiler and melt chocolate over low heat. You can also do this in the microwave. Remove from heat and let cool. Beat in egg yolks, one at a time until mixture is glossy and eggs are fully incorporated. Add pure vanilla extract.
Beat egg whites until stiff peaks are formed. Carefully fold in 1/4 of the chocolate mixture until just incorporated. Add the balance of the chocolate mixture and mix just until incorporated. Pour into the baked pie shell and chill.
Just before serving, whip cream with powdered sugar and vanilla, until well-whipped by not stiff. Mound on pie and spread evenly around pie. Decorate with chocolate shavings or a light sprinkle of cocoa if desired.
