Makes 3 dozen cookies.
Ingredients 3 large eggs 3/4 cup sugar 1/4 cup heavy cream 1/4 cup butter, melted 1-1/2 teaspoons Rain’s Choice Pure Vanilla Extract 3-1/2 cups all purpose flour 1/4 teaspoon salt Vegetable oil for deep fat frying Confectioners’ sugar
Instructions Place the eggs in a large bowl and beat until foamy. Gradually bean in the sugar on low speed. Increase the speed to high and beat until thick and lemon colored, about 3 minutes.
Reduce the mixer speed to low and add the whipping cream, butter and vanilla. Gradually bean in the flour and salt and mix until a soft dough is formed.
Wrap the dough in waxed paper and chill several hours or overnight.
Heat the oil in a deep fat fryer or heavy saucepan to 375 degrees F. Divide the dough in half and place half on a well-floured surface. Roll dough into 3/8-inch thickness and cut into 1-inch strips. Create diamond shapes by cutting strips diagonally every 2-1/2 inches.
Cut a 1-inch slit between two corners and pull the opposite corner through to the othr side. Fry the dough in hot oil until golden brown, about 1 to 2 minutes, turning once. Drain on paper towels. Sprinkle with confectioners’ sugar.
