Ingredients:
Peels from 10 large oranges, well-scrubbed
8 cups dry white wine such as Sauvignon Blanc
2 cups vodka
2 Bourbon Vanilla Beans split lengthwise
2 cups sugar

Instructions:
Place the orange peel, wine, vodka, and vanilla beans in a non-reactive bowl. Add half the sugar and stir.

Place the remaining sugar in a small, heavy-bottomed saucepan over medium heat, and let it caramelize to a deep golden, rotating the pan so that the sugar caramelizes evenly. Remove the pan from the heat and pour the caramel into the bowl of ingredients. The sugar will turn hard but will melt into the liquid later.

Cover the bowl and allow the orange wine to sit for six days, stirring several times a day.

Strain the wine through three thicknesses of cheesecloth and decant into bottles. You can add the vanilla beans to the bottles or not, depending on how strong you want the vanilla flavor. If you don’t use them in the wine, they can be used again.

Cork the bottles and allow to sit for at least one month and up to a year before opening. Makes about 2-1/2 quarts of orange wine.
